When Alila first came to one of Bali’s most devout and ancient kingdoms they knew they would have to combine the needs of both the local people and their customs with the needs of their guests to succeed. When I first came to Alila Manggis, I could see that they had managed to pull it off.

Having neither the energy nor inclination to climb a mountain or ride a bike I instead chose to be guided through an Indonesian cooking class with their star chef. We visited the local market and their hillside organic gardens to select our produce before spending an engaging couple of hours in humour and good company preparing some of the best food these humble hands have ever made. I forgot learning could be so much fun.
